Blackstrap Molasses Gingerbread People

   I like to be politically correct when making cookies, so I'm going to go ahead and call these gingerbread people. Besides, these cookies are sweet, fulfilling, full of flavor... which all spells out gingerbread lady to me anyways!

   This recipe is made with unsulphured blackstrap molasses which is surprisingly a great source of calcium. So score one for your bones ladies, these bad "ladies" are actually beneficial! In small doses of course, easy does it...easy does it.

Recipe:

3 cups organic all purpose flour
3/4 cup organic brown sugar
1 teaspoon baking soda
1/2 teaspoon iodized sea salt
1 1/2 sticks organic butter, melted
1 cup blackstrap unsulphured molasses
1/4 cup organic unsweetened coconut milk, plus more if needed
2 teaspoons ground ginger
1 teaspoon ground cinnamon
1 teaspoon nutmeg

Preheat oven to 350 degrees. Combine flour, sugar, baking soda, salt, and spices in a bowl. Add molasses, melted butter, and coconut milk and mix until batter is well formed. Chill batter in refrigerator for several hours before attempting to roll out dough. When ready, roll out on a floured surface and use cookie cutters to shape dough. Place on a lightly greased cookie sheet and bake for 10-12 minutes. Decorate when cool.
