Baked Apple Oatmeal Pancake

   This is the perfect weekend lazy girl's breakfast. Complete with fresh apples and a healthy pancake batter made with all natural ingredients, you can't go wrong making this dish. Just make sure someone else washes the dishes for you. Because after all, you worked hard at making a nutritious meal for yourself and your family that someone else should clean up. At least that's my approach.

   Just don't go serving it with vanilla ice cream like my husband wanted to. It is a breakfast food after all and dairy would totally ruin it.

Recipe:

8 small organic apples, peeled and cut into slices
1 tbsp lemon juice
1 1/2 cup quick cook rolled oats
1 banana
4 medjool dates
1 tsp ground cinnamon
1 tbsp baking powder
1 tsp vanilla extract
3/4 cup coconut milk
1/4 cup filtered water

Directions:

Preheat oven to 400 degrees. 

1.) Wash, peel and cut apples into slices. Toss with 1 tbsp lemon juice. Plans into an oven proof baking dish.

2.) In a blender, combine oats, cinnamon,
and baking powder. Add banana, dates, coconut milk, vanilla extract and water until well mixed. 

3.) Pour oatmeal batter in a thin even layer on top of apples. 

4.) Bake in oven  for 25 minutes. Let cool and serve.
