The Sweet(est) Potato Soup

   I'm normally not a big fan of soups. They usually fill you up for like half a second and then you are left with an overwhelming feeling of wanting to gnaw off your right hand because you are still starving.

    I really was craving sweet potato soup last night though, so I had to make it. And true to test, I was starving about two hours later. But for those two hours after eating it, I was pleasantly satisfied and warm and toasty on the inside! All without the addition of heavy creams, excess sodium, or un healthy fats that most people think really make a soup hearty or filling.

    I also knew however, that I was receiving some seriously sweet benefits in the form of warming spices. According to ancient Ayurvedic medicine, spices like Turmeric and Ginger (used in this recipe) help to boost up our immune system and have great anti-inflammatory and anti-oxidant properties. Sweet Potatoes are also an excellenet source of carotenes, vitamin C, and B6 which help to boost your immune system as well.


  So instead of worrying about getting sick this winter, try out this recipe instead and do yourself (and your immune system) a favor! Really though, worrying too much can also make you sick....

On a side note, if you are using a Vitamix to make this recipe, use less spice. After using mine I noticed that the spices were too powerful than when I made this originally in a regular blender.

Recipe:

6 small to medium sized organic sweet potatoes, peeled and cubed
2-3 small shallots, diced
2 Tbsp Unrefined Organic Virgin Coconut Oil
2 cups Organic Low Sodium Vegetable Broth
2 cups filtered water
2 tsp ground ginger
1 tsp ground turmeric
1/2 tsp ground nutmeg
1/2 tsp sea salt

Directions:

In a stock pot, combine coconut oil and shallots on low heat. Saute until soft, about 5 minutes. Add in cubed sweet potaotes, and spices. Saute on medium heat for 5 minutes. Add in vegetable broth and water and bring to a boil. Simmer for an additional 15 minutes, or until sweet potatoes become soft. With an immersion blender, puree soup mixture until chunks no longer remain. Top with additional nutmeg. Enjoy!
