Gluten Free Apple Crisp

Apple crisp is one of my favorite fall foods since it combines the deliciousness of apples, cinnamon, and fiber packed oats. It's my way of getting the most nutrition out of a sweet treat that doesn't require me to make a butter filled flour mess of a pie crust. 

And while this recipe isn't your normal super golden crisp since I don't use a stick of butter or a cup of sugar, it will still satisfy your craving while using healthier ingredients all the same.

Recipe:

8 cortland apples, peeled and sliced into chunks
2 cups gluten free extra thick rolled oats
1/4 cup millet flour
1 tsp cinnamon
1/4 tsp nutmeg
1/2 cup pure maple syrup 
3 tbsp unrefined coconut oil
3 tbsp chia seeds
1/2 cup ground almonds( I used a Vitamix)

Directions

In a bowl combine rolled oats, cinnamon, nutmeg, millet flour, maple syrup, coconut oil, chia seeds, and ground almonds. 

Layer apple chunks in a Pyrex dish. Top evenly with oat mixture. Bake in oven at 375 degrees for 35-45 minutes.
