Tabbouleh Kale Salad

My taste buds soar for this here salad. The lemon and parsley are so light and cleansing that you immediately feel better after eating it.
 
Ok, I may be over-selling it just a weeeee bit, but the truth of the matter is that food should make you feel good! And that's exactly what this salad will do.

 
 
Recipe:
 
1 organic beefsteak tomato, guts removed and diced
1/2 organic English cucumber, guts removed and diced (skin optional)
1/3 cup chopped fresh parsley (Curly or Italian, I used Curly)
1 heaping handful Dandelion leaves, roughly chopped
1 heaping handful organic baby kale (Or Dino or Lacinto), roughly chopped
1 garlic clove, grated
3 tbsp. raw hulled hemp seeds
Juice of 1/2 lemon
3 tbsp. EVOO
Sea Salt to taste
 
Directions:
 
In a bowl, toss together tomatoes, cucumbers, parsley, kale, and dandelion. Fold in hemp seeds. Combine lemon juice, olive oil, and garlic. Toss into salad and coat well. Sprinkle in sea salt to taste.
